Ingredients
- 2–3 tbsp sesame oil
- 1 handful fresh curry leaves
- 10 dried red chillies
- 6–10 garlic cloves (some with skin)
- Salt to taste
- Water (as needed to crush)
Instructions
Step 1:Heat oil in a pan. Add fresh curry leaves and sauté until crisp and dry. Remove and set aside.
Step 2:In the same oil, roast red chillies until browned and crisp. Remove and reserve the leftover oil.
Step 3:Add roasted curry leaves and chillies to a stone mortar and start crushing with little water.
Step 4:Add garlic cloves and salt, continue pounding into a medium-coarse paste.
Step 5:Pour reserved oil into the mixture and mix well.
Step 6:Serve with idli or dosa. Store at room temperature for 2 days or refrigerate up to a week.
