Black Urad Dal Bonda (High-Protein Snack)

A crispy, fluffy South Indian bonda made using black urad dal instead of besan or maida. It’s packed with protein and flavour — a perfect tea-time or tiffin-time snack!

Ingredients
- 1 cup black urad dal (with skin)
- Salt – to taste
- 1 onion – chopped
- 1–2 green chillies – chopped
- Few curry leaves – chopped
- Water – as needed to grind
- Oil – for deep frying
Instructions
Step 1: Soak black urad dal for 5 hours. For best results, refrigerate the soaked dal — this softens the batter and gives extra crispness.
Step 2: Drain water and transfer dal to a mixie. Grind to a thick, fluffy batter, adding water little by little.
Step 3: Scoop batter into a bowl. Add salt and mix well to aerate.
Step 4: Add chopped onions, green chillies, and curry leaves. Mix gently.
Step 5: Heat oil in a kadai. To test, drop a tiny bit of batter — if it rises immediately, the oil is ready.
Step 6: Drop small spoonfuls of batter into the hot oil. Fry on medium-high heat until golden and crisp.
Step 7: Drain excess oil and serve hot with chutney!
