- 2 large bharta brinjals (thickly sliced)
- 1 tbsp Errakaaram™ Fresh Spicy Indian Chutney
- 2 tbsp oil
- Salt to taste
- Steamed rice (for serving)
Instructions
Step 1: Cut the bharta brinjal into thick round slices and poke holes using a toothpick.
Step 2: Smear Errakaaram™ chutney generously on both sides of the brinjal slices and marinate for 5 minutes.
Step 3: Heat oil on a tawa and place the marinated brinjal slices on it.
Step 4: Roast the brinjal slices until they are mildly charred and soft, flipping as needed to cook evenly.
Step 5: Serve hot with steamed rice for a smoky, spicy meal.
