Soya Roast (Soya Varuval)

A bold and rustic Soya Roast made with dry-roasted red chillies, cumin, raw garlic, and a final hot oil pour that locks in all the flavours. Soya chunks are sautéed until golden, then coated with a fresh crushed masala and topped with fenugreek-infused oil. Perfect with dosa, chapati, paratha, or rice.

Ingredients
- Soya chunks – required quantity
- 4–5 dry red chillies
- 1 tbsp cumin seeds
- 4–5 garlic cloves (raw)
- 1 onion – thinly sliced
- ½ tsp turmeric powder
- Salt – as required
- 1.5 tbsp oil + ½ tsp oil (separately used)
- A pinch of fenugreek seeds
Instructions
Step 1: Dry roast red chillies and cumin seeds until lightly charred and aromatic.
Step 2: Crush the roasted spices partially in a mortar and pestle.
Step 3: Add raw garlic cloves and crush again to a coarse paste. Set aside.
Step 4: In ½ tsp oil, sauté soya chunks until browned and crisp outside. Remove and cool.
Step 5: In a mixing bowl, add sautéed soya, sliced onion, turmeric powder, salt, and the prepared masala paste. Mix well by hand (do not crush).
Step 6: Heat 1.5 tbsp oil. Add a pinch of fenugreek seeds and let it turn golden brown.
Step 7: Pour this hot, infused oil over the soya mix and stir well to combine.
Step 8: Serve hot with rice, dosa, or chapati.
