Poondu Milagu Sadam (Garlic Pepper Rice)

A bold, aromatic South Indian rice dish with the punch of garlic and freshly crushed black pepper — finished with curry leaves and ghee. Comforting, quick, and full of flavour.

Ingredients
- 2 cups cooked rice (slightly cooled, grains separate)
- 10–12 garlic cloves (peeled, lightly crushed)
- 1 to 1½ tsp black pepper (freshly ground, coarse)
- 6 to 8 curry leaves
- 2 tbsp ghee (or ghee + sesame oil combo for stronger flavour)
- Salt – as required
Instructions
Step 1: Cook the rice and spread it to cool slightly. Make sure grains remain separate.
Step 2: Lightly crush garlic and coarsely grind pepper (separately or together).
Step 3: Heat 2 tbsp ghee in a pan.
Step 4: Add crushed garlic and sauté until golden and aromatic.
Step 5: Add curry leaves and let them splutter.
Step 6: Add crushed pepper and sauté briefly — just enough to release the aroma.
Step 7: Add this tempering to the rice along with salt. Mix gently.
Step 8: Serve hot with appalam, vadagam, or curd.
