Fried Lady's Finger Rice with Errakaaram™

Ingredients
- 1 cup cooked rice
- 1 cup lady's finger (okra), chopped
- 2 tbsp oil
- 1 tsp mustard seeds
- ¼ tsp fennel seeds
- 2–3 garlic cloves (crushed)
- ½ cup onion (chopped)
- A few curry leaves
- ¼ cup tomato (chopped)
- ½ tsp turmeric powder
- Salt to taste
- 1–2 tbsp Errakaaram™ Fresh Spicy Indian Chutney
- ¼ cup raw mango (chopped)
- Chopped coriander leaves
Instructions
Step 1: Heat oil in a pan and fry chopped okra until crisp; remove and set aside.
Step 2: In the same pan, add mustard seeds, fennel seeds, and crushed garlic; sauté briefly.
Step 3: Add onions and curry leaves; sauté 2–3 minutes until softened.
Step 4: Add tomatoes, turmeric, and salt; cook for 2 minutes.
Step 5: Stir in Errakaaram™ chutney and mix well.
Step 6: Add fried okra and chopped raw mango; mix to combine.
Step 7: Add cooked rice and chopped coriander; stir gently until well blended. Serve hot.
