Ingredients
- 9–10 long purple brinjals (eggplants)
- Salt (for rubbing and seasoning)
- 1-inch piece of ginger
- 2–3 green chilies
- 3–4 spring onions
- 4–5 garlic cloves
- 1 tbsp oil
- 1–2 tbsp Errakaaram™ Fresh Spicy Indian Chutney
- 2–3 tbsp soy sauce
- 1½ cups water
- 1 tsp corn flour mixed with water
Instructions
Step 1: Rub sliced brinjals with salt and set aside for 10 minutes. Pat dry.
Step 2: Fry the brinjals in oil until lightly golden. Remove and set aside.
Step 3: Chop ginger, garlic, spring onions, and green chilies finely.
Step 4: In the same pan, sauté chopped aromatics until fragrant.
Step 5: Add brinjals, Errakaaram™ chutney, soy sauce, and water. Simmer 5 minutes.
Step 6: Stir in cornflour slurry; cook until gravy thickens slightly. Serve hot with rice or rotis.
